Traditional Style Shrimp & Grits with Bacon, Onion, and Butter

Ingredients:
1. 1 lb large fresh shrimp, peeled and deveined
2. 6 slices of thick-cut bacon, chopped
3. 1 medium onion, finely diced
4. 3 cloves garlic, minced
5. 2 cups chicken or seafood broth
6. 1/2 cup white wine (optional)
7. 4 tablespoons unsalted butter, divided
8. 1/4 cup fresh parsley, chopped
9. 1 teaspoon paprika
10. Salt and pepper to taste
11. Lemon wedges, for serving
12. Green onions, chopped for garnish (optional)
13. “Callie’s Hot Little Biscuits” grits (prepare according to package instructions)

Instructions:
1. Prepare the Bacon and Onions: In a large skillet over medium heat, cook the chopped bacon until it’s crisp and has rendered most of its fat. Remove the bacon pieces with a slotted spoon and set aside, leaving the grease in the skillet.

2. To the same skillet with bacon grease, add the diced onion. Sauté until translucent and tender, about 4-5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, or until fragrant.

3. Cook the Shrimp: Push the onions and garlic to the side of the skillet, making room for the shrimp. Add 2 tablespoons of butter and let it melt. Place the shrimp in a single layer, season with salt, pepper, and paprika. Cook until the shrimp turn pink on the bottom side, about 2 minutes. Flip the shrimp over and cook until they are pink on both sides.

4. Add the Broth and Wine: Pour in the chicken or seafood broth and white wine (if using). Bring to a simmer and let it cook for 3-4 minutes, allowing the flavors to meld together.

5. Finish the Dish: Return the cooked bacon to the skillet, add the remaining 2 tablespoons of butter, and stir until the butter is melted and everything is well combined. Check for seasoning and adjust salt and pepper if necessary.

6. Serve: Spoon prepared “Callie’s Little Biscuits” grits onto plates or in shallow bowls. Top with the shrimp mixture, making sure to get plenty of the broth. Garnish with fresh parsley, green onions, and a squeeze of lemon.

Every bite of this shrimp and grits dish will transport you to a Southern family gathering, where stories are told, and traditions are celebrated. Revel in the richness of the dish and cherish the heritage it represents.
